
Hummus in a tiffin
I love hummus and would often make a batch of this and tabbouleh at the same time when i was living overseas – they go together like peanut butter and chocolate or pretzels and beer or wine and cheese…. at any rate, always a quick and easy recipe which takes almost no time to whip up.
Happy Tiffin Hummus
- 2 garlic cloves
- 2 cups canned chickpeas, drained, reserve liquid
- 1 1/2 teaspoons kosher salt
- 1/3 cup tahini aka sesame paste
- Juice of 1 freshly squeezed lemon
- 1 or 2 tablespoons water or liquid from the chickpeas
- Nice dash of cayenne pepper
Mix all of the above in a blender… taste for seasoning and serve with cut up veggies, marcona almonds, grapes and your favorite wine.
